I've been alternating between the OE Castrol (with the free maintenance) and Pennzoil Ultra Euro 5W-40 (502 compliant and recognized/certified by Audi/VW) in 5,000 mile intervals. I've had both tested, and the TBN is higher on the Pennzoil and the viscosity always perfect (Castrol tends to read thinner than 5w-40 on the samples I've sent in for analysis).

In my gen 3, I've used Castrol OE Professional 5w40 (the Castrol in the gold bottle that the dealer sells - oil has a green tint to it), both when I did the 5k mile change and when the dealer did the 10k change.
i had previously been using Total Energy 9000 5-40 and had been running it for 2 seasons .i would change out the filter after 1 year and top it up with approx. 3/4 qt of fresh oil. i don't drive a whole lot and had only put on about 9,500 miles in that time. i just switched back to Castrol Edge 5-40 this week.
If you're looking for high moly content, I like Redline oil. Google it, there's tons to read on Bob is the Oil Guy alone. That, as well as Motul, have been great in my 2.0T which is pretty hard on oil.
You don't need to add any more additives to modern day oils. You said you will be using Mazda 0W-20 oil? This is one of the best 0W-20 oils on the market. It is made by Idemitsu for Mazda. It has very high Viscosity Index of 221. Most 0W-20 oils are around 170. This means it is one of the lightest 0W-20 at start up. This is what you want in the winter.
I also use Amsoil European Spec Mid-Sap 5W40 approved by VW
Used Castrol 0W-30 in the past with the GTI and GLI. Pretty decent oil analysis numbers when tested.
Shell Rotella T6 is a nice, solid oil. relatively inexpensive also.

Turbo ppl love it due to the shearing factor. Blows M1 out of the water for down here in Florida. Oil consumption went down in my 2.0T when using it.
