Engine oil Mobil or Motorex
Not sure if my opinion matters, but I use the Toyota version of the Mobil1 0W-16. Runs great.
Use an oil designed for a wet clutch, like this [motorex 15w50]
Change the oil again and use Mobil 1 full synthetic and make sure it says V-TWIN on the label.

Mobil1 and Castrol are all I’ve ever used on my 266k mile 09 rabbit. I replaced the valve cover in nov 21 and that engine was super clean inside. Still runs very well.
If I could change the oil myself I would do it every 5k using the cheapest 507.00 spec oil I can find. But I can’t so I do it every 10k and use Mobil1 ESP.
As long as it states VW502 on the back, you should be fine.
I used to live in Chicago, and had cut over to Mobil1 0W40 based on feedback from a very respected resource who worked for Porsche. For context, his recommendation was grounded in enabling my engine to better handle the harsh Chicago winter temps.
To be frank, I'm not sure if it made a huge difference but then again I do not have a chemical or petroleum engineering degree.
I drove my VW to 200k miles without any issues.
You can also try changing your oil to M1 15w50 full synthetic that helped me with my cold start rattling issues and the engine seems to run smoother along with the vanos idle clacking noises going away.
I used mobile one 0w40 but burned oil so I filled it up again idk might be cause of the heat or of course the motor which would be normal, but I usually aim at chaning the oil every 8k or half miles on my 2.0t TFSI engine and now I'm using 5w40 motul for my up coming oil change
