For normal driving I'd recommend either ATE Ceramic pads, paired with ATE, painted or coated discs.
Get Ate ceramic. never (almost never) have to wash your wheels again

For Shimano Ultegra/Dura Ace
I threw a set of Galfer pads in mine and have been happy.
I also suggest you to buy ATE or TRW pads, because cheap stuff might squeak.
I run HH Sintered Galfer pads which make a big difference off road.

We use ATE here in Germany. Rear brake pads will probably require a diagnostic device to disengage the electrical parking brake.
