Sorry it's a little late, but I've been using EBC yellows on my MK6 for double duty and I have no complaints other than the dust. They certainly make no noise.

Pros: make no noise

I stand by Carbotechs. Whether it's my S2000 or heavy E90, they've done great is hard lapping all day long. Depending on the car, XP10s in front and XP8s in the back work well for most. You can call them and they'll recommend the right pad. Their super noisy for street use but brilliant on the track.

2500 pads are a great pad, I dd those and have tracked with them. Carbotech makes great track pads that can be driven on the street, have a set on the Z06 and they take a beating at the track.

I put EBC Red stuff on my GTI (non-PP). I thought the stock pads were too aggressive when driving around town. The reds are less touchy when lightly applied and stop quite well. Very little brake dust. I'm very happy with them.

Pros: less brake dust, stop well

Pads: there are lots of options, of course. Generally speaking, the better performance a pad offers, the harder it will be on rotors. I like Pagid a lot, as well as Mintex. Akebono makes some nice ceramic pads that offer no dust and reasonable performance. I prefer a really aggressive pad. Most people underestimate that the pads are your biggest, easiest brake upgrade. My favorite pad is Carbotech. They are out of NC. The panther pad is almost a race brake pad. Constant squealing, lots of dust, and you have to warm them up to get them to work. But when you step on it, you're thankful for seat belts.

I ran carbotechs on my mkV, they are absolutely fantastic for the track. A bit scary on the street totally cold but very livable if you make sure to warm them up.

I used ebc yellows on a 93 mr2 turbo at road Atlanta for 2 full track days this spring with no issues. Also dailied it for a while with them as well.

Pros: no issues, durable

Run EBC red and be happy. Much better than Hawk HPS (or even HP+ for certain use), and not comparable to the Akebonos because those (Akebono) are really low dust pads with no bite for a heavy and sporty car like the TT.

Pros: much better than Hawk HPS
Cons: no bite for heavy car

FWIW - I used EBC yellows with S3 single piston calipers on the track with both my A3 and now my TT. The EBC usually only lasted one track weekend, prone to brake fad, and ate up the rotors (both stock and StopTech) pretty bad. I have Pagid RSL29 now on the front (with EBC rotors), and they are fantastic on the track. I didnt realize how much the yellows under-performed until I got the Pagids. Just passing it along...

I've used them on my previous car and wasn't impressed, HP+ on the other hand was a much better choice for me (not to mention quite a bit cheaper)
