I run EBC redstuff and Ultimax rotors on my TT and really like the stopping power. Have run the pads for over year in both street and track and the rotors for 2 years of both street and track without issues. My CC run greenstuff and although the stopping power is great, they have way too much dust for my taste.

Pros: like the stopping power
Cons: way too much dust

I've been using the EBC Red Stuff on my MK5 GTI front and rear for about 2 years or so (about 25k miles). I will agree with everything that their graph says except I would put the dusting a little more to the medium scale. I do notice the bite getting better as the pads get some heat into them (which matches to what their graph is saying).

Pros: bite gets better
Cons: medium scale dusting

Definitely upgrade from stock pads as that will give you the most improvement. Just this morning I was looking to see if Carbotech (absolutely love their pads) made anything for the GTI, but they only have pads for the PP GTI. I sent them an email to see if they have their 1521 pads available for a non-PP GTI. Since Carbotech is not an option at the moment there is EBC green or red stuff. You would probably be just fine with EBC Green Stuff. ECS sells it and I just checked and fronts are on sale for only $57 for a set. Hawk is another good brand but I can't seem to find anything from them for our cars yet. Unfortunately there are not many choices out there at the moment for upgraded pads.

Pros: most improvement, good brand options
Cons: limited choices for non-PP GTI

Carbotech Brake pads

I was running Carbotech Xp12s in the front and XP10s in the rear. That and a good fluid is all it needs, but it's a relatively heavy car so it will take a toll on tires and brakes. Also, MDM (stability control) on the competition pack equipped models allows for quite a bit of of slip (yaw) before intrevening, which is nice whether is a novice driver or just wanting to approach the limit in a safer way. Tires are somewhat pricey especially with the 19" wheels, but not excessively so. A set of PSSs will run around $1400. Oil changes, DIY, are about $150 or so. Spark plugs should be changed at about 20K mile intervals. The only problem I had was a bad evaporator for the A/C which was replaced under warranty (book value on the job is about 9 hours). It's a great daily driver, except for the gas mileage and especially the range. It has a relatively small tank and you'll barely get close to 300 miles per tank. That's the most frustrating bit about it. I do wish it had a slightly bigger tank. The sound is great. It's addictive especially with a nice exhaust system (I highly recommend the M Performance exhaust).

I had the same problem, thought it was the suspension. Took this video to diagnose it and the dealer figured out it was the EBC pads rattling in the calipers. Too bad, I really liked how quiet they were (no squaks!) for street duty while giving no fade issues for 25 mins track sessions.

Pros: quiet, no fade issues

StopTech slotted rotors and EBC Yellow pads. Rotors and pads have one track day on them and a few thousand commuting miles. My OEM rotors with the same brand pads lasted 4-5 track days and 30k miles.

Cons: vibration under braking, shuddering
