I put a full set of power stop ceramic pads and their drilled rotors 40k miles ago, and they are still great as well.

For my 2016 V60 I only spend about $500. Also depending on your rotors and pads, there's no need to do both front and rear together.
I replaced the front pads myself after 25,000 miles (was 2 years ago), it cost me under $200, including all the necessary tools and original Volvo pads.
My Mercedes is much older W210, but for the brakes I went with Zimmerman Coat Z rotors and Akebono Euro ceramic pads. The front pads have been on for about 30k miles and are not even close to needing replacement. And they leave almost no brake dust, so my wheels look clean all the time now. Only real downside is they have a bit less initial bite than the oem pads, but I have actually come to prefer the more linear braking feel and haven't had any problems with stopping power.
Hey, I track. MK7.5! The floating calipers flex which means you get more pressure on the outer half of the rotor. It's annoying but it's not a problem in my experience.
Something like a Carbotech XP12 pad might do better with the heat but adding brake ducts from the RS3 is cheap and will help quite a bit.
Girodisc should have a 357mm disc available when you've gone through the OE rotors. They're slotted instead of drilled and are 2 piece (aluminum hat).
I went with Dynamic Friction 5000 low metallic pads and they've been great!
Buy pads and the sensor from FCP Euro. Use their lifetime replacement warranty for the next set. Went to the dealer in July for an alignment and they recommended pads for a similar price. I bought pads rotors and sensors for front and back, total was $1000 for BMW parts. You could save with Jurid which is listed as OE and OEM. My pads are at 4mm all around so I'm actually waiting for the sensor to trip before doing the job.
Mk5 R32 OEM rotors and pads - made by Brembo and i believe are powder coated. They are lasting a long time and are very strong to abuse
I’m at around 104k in my 3, on original pads but had an issue with the rear clips causing some squeaks and need to replace those.
